So I may be obsessed with mint and chocolate. I think I have a problem and may need a therapy group or something. Let’s just say I have been running, ok mostly walking, with my son who just learned to ride a BIKE!! So exciting and so perfect on timing because I have been making desserts left and right.
Last night I thought that the mint chocolate fudge was so wonderful that I may the other day, I would try out a little recipe to make brownies with a hint of mint. I wanted it to be just a little flavor so I didn’t use peppermint extract but some creme de menthe andes baking chips. Those are wonderful by the way!! I use them in my sugar cookies to put a spin on those too!! I told my husband I was going to make brownies and he gets so excited for dessert. It’s so funny. Then they were done and he had two. I haven’t made fudge in awhile and I used to make killer peanut butter fudge. But since our littlest one was diagnosed with a peanut allergy no more peanuts or peanut related foods in this house. Needless to say a soy butter fudge is coming soon. But in the meantime I made a mint chocolate fudge that is to die for. So when your craving a little treat fudge is perfect. But remember that you may have to lock them up because having just one is not an option after you try these out. The mint flavor is great because it’s just the right amount. I’ve noticed that too much mint extract is overwhelming and leaves then worst aftertaste. So get ready for some extra burpees because these are worth it!!!
Last night I got to thinking how we have raised our children and how we are still raising them. Let’s just say we are introverts. I was always an introvert and in college I had a social burst that died out as I hit my late 20s. My husband was pretty social when we met and he gradually has become more introverted than me. I hadn’t made lasagna for the longest time and the other day we decided it was perfect for dinner. Now I’ve made it again already because it was so good and so easy. My kids actually love it to even though they are a little picky. Throw some garlic bread and salad together and you’ve got a nice little meal that was easy to make. I use to hate making it sometimes because I had trouble with the noodles falling apart after I cooked them. I would be trying to assemble the layers and the noodles would tear. The other day my son and I were racing outside. He is so fast its crazy. Lets just say I lost and my pride was hurt so my husband gave it a try. Samuel, my 5 year old, said, “Ok if I win I get to pick what we have for dinner?” Oh no I thought to myself its going to be fried chicken and fries. That’s what he always picks. So he wins, I think daddy let him win. And to my surprise he said, “Ok mommy, We are gonna have chicken, mashed potatoes, and carrots?” Carrots? He doesn’t even like carrots. But I said ok and whipped up some tender and perfectly cooked as my husband stated glazed carrots. They are so easy and only need a few ingredients to make them so flavorful. If you have brown sugar, butter, salt and pepper, and water, Oh and carrots you are all set.
When life gives you lemons you make pancakes!! Well I do anyways!!! Check out these quick and easy pancakes that will bring a little sunshine at sunrise. The lemon flavor is there but not overpowering. My kids loved them and my husband did too. His first reaction was that face he makes when I tell him I’m gonna make something and he’s not looking forward to it. You know that face like they love you and don’t want to hurt your feelings but they know its not going to be good. But after he devoured the two I gave him he came back for more. So if you love lemons and pancakes put them together for a twist on your typical morning.
I went a little pizza crazy today and got a little creative!! I set my little one up with a painting activity while I was whipping up some pizzas.

We typically have a pepperoni and cheese for the boys and then a pepperoni and hamburger one for us. But today I had some chicken left over and decided to do a BBQ one. It’s so easy just cook your chicken pieces in an oiled skillet , toss in your favorite BBQ sauce, some spinach and onion after the chicken is cooked. I think he approved!!

Sometimes you need a little flavor in your life. Meals tend to get repeated a lot around our home just because we like what we like. But when your looking for something to shake things up this is perfect!! I am also a little scared of some restaurants unless they are reputable ones. Especially the buffets and this is merely because in my past career I was basically a inspector for a major sandwich chain and I saw the worst of the worst. I also made nice with health inspectors when our visits would cross and they filled me in on all the horror stories. So I do my research and around my city we have to avoid a lot of restaurants no matter the type because we know. It’s also public knowledge and in the paper as well sometimes locally.
My husband recently bought me a fryer and I was so excited to try some fun stuff out. Of course we did the fries and chicken but now it was time for dessert. Have you ever had fried ice cream. Its heaven and defies all food science because the ice cream is put in a fryer. How does it hold up and not just melt into a mess? Oh magic that’s how!! We were having my brothers and my dad over for dinner and I wanted to make something special. My brother was visiting from texas so this was perfect to accompany the beef barbocoa nachos I served up before. It takes some planning but really it is super easy.
